Apricot White Chocolate Scones
Ingredients:(Original amounts listed, but I generally triple this recipe)
1/3 cup firm butter
1 3/4 cups all purpose flour
1/4 cup sugar
2 tsp baking powder
1/4 tsp salt
1/3 cup diced dried apricots
1/3 cup white choc chips/vanilla milk chips
1 egg
approx 1/3 cup half-&-half
Heat oven to 400 degrees. Cut butter into flour, sugar, baking powdwer, and salt using pastry blender, until mixture resembles fine crumbs. Stir in apricots & white choc. chips. Stir in egg and enough half&half so the dough leaves the sides of the bowl and forms a ball. Turn dough onto a lightly floured surface. Knead lightly 10 times. Pat into an 8 inch circle onto ungreased cookie sheet. It will be about 1/2 to 3/4" thick. Cut into 8 wedges with a floured blade, but do not separate. Sprinkle with additional sugar if desired. (I always desire!) Bake 15-18 min or until very light brown. Remove from cookie sheet immediately and separate wedges. Serve warm with your favorite cup of tea or coffee, or me. Each reciped makes 8 fluffy scones. I hope you enjoy them as much as I do.
