Apricot White Chocolate Scones

Ingredients:(Original amounts listed, but I generally triple this recipe)
1/3 cup firm butter
1 3/4 cups all purpose flour
1/4 cup sugar
2 tsp baking powder
1/4 tsp salt
1/3 cup diced dried apricots
1/3 cup white choc chips/vanilla milk chips
1 egg
approx 1/3 cup half-&-half

Heat oven to 400 degrees. Cut butter into flour, sugar,baking powdwer, and salt using pastry blender, until mixture resembles fine crumbs. Stir in apricots & white choc. chips. Stir in egg and enough half&half so the dough leaves the sides of the bowl and forms a ball. Turn dough onto a lightly floured surface. Knead lightly 10 times. Pat into an 8 inch circle onto ungreased cookie sheet. It will be about 1/2 to 3/4" thick. Cut into 8 wedges with a floured blade, but do not separate. Sprinkle with additional sugar if desired. (I always desire!) Bake 15-18 min or until very light brown. Remove from cookie sheet immediately and separate wedges. Serve warm with your favorite cup of tea or coffee, or me. Each reciped makes 8 fluffy scones. I hope you enjoy them as much as I do.

These Are A Few Of My Favorite Things...

Challenging myself to try something new. (Insert drum roll here) Announcing the birth of my new blog. Here you will find a sampling of things that speak to my heart. It will likely become a melange of topics that I treasure. Most of these topics will likely be stories about four of my favorite Things....my kids. Dr. Seuss had Thing #1 and Thing #2. Me? I am blessed with Thing #1, Thing #2, Thing #3 & Thing #4. God so often uses my kids to bless me, teach me and stretch me. I can't remember the last time my life was dull. With four kids that are as different as night & day, you just never know where the road will lead. I welcome company along the journey, and you're invited to join us. Be patient with me as I take on this new challenge. The blog will likely change a lot over time, as I learn new things. Feel free to leave comments. I am timidly excited to begin this blog. For years I have followed other peoples' blogs. I know they can be very encouraging and entertaining for readers. I hope always to honor God with each and every post. Let the journey begin.......here.we.go!
